03

Do Black Teas contain more caffeine than other teas?

Yes, Black Teas contain more caffeine than other teas such as Green, White and Oolong teas.  But, Black Teas contain 45mg or less of caffeine per cup, in comparison, a cup of drip coffee contains approximately 100+ mg of caffeine.

04

Do White and Green Teas contain higher caffeine?

No. White Teas contain less than 10mg of caffeine, and Green Teas contain approximately 20mg of caffeine per cup.  Nevertheless, if you have cardiac arrhythmia, or are taking Monoamine Oxidase (MAO) inhibitor drugs, or have any medical condition for which caffeine is forbidden, you must, sadly, avoid even green tea.  Perhaps try our Herbal Tea and Flower Tea as an alternative.

05

Are all teas organic?

No.  Only true high graded AAA tea leaves are 100% organic.  Organic tea is always has less aroma but when tasted that a body of the tea has a strong liquor.  And the leaf is more thick and big.  So we use the roasting technique to change the aroma of the tea into different stronger aroma.  It boring’s up and changes the aroma of the tea itself.  Then we would more focus on the liquor of the tea but not aroma.  Some people like to have the stronger aroma of the tea.  But some people are more likely on tasting of the tea.  Actually, the organic tea is always more healthy to drink it.

06

Is tea good for you?

Yes.  Recent studies in the last 10 years undertaken at major medical universities in the United States have found that black and green tea are rich in polyphenols which are antioxidants.  Antioxidants are known cancer inhibitors and studies have shown that people who consume 4 or 5 cups of tea per day have exhibited up to a 50% lower probability of contracting specific types of cancer such as breast and colon cancer.  Also in the last 2 or 3 years initial study results are showing that there is a lower incidence of heart disease amongst those who consume 3 or more cups of tea per day.

07

Why is tea sometimes bitter?

Tea contains tannins and if a tea is allowed to steep too long or get wrong water temperature, more of the tannins are released causing what some people say is a bitter taste.  A dash of sugar can reduce this bitterness or alternatively add some milk, as this will reduce the pH level of the tea.

08

What is Oolong Tea?

Green Tea is not-fermented tea, and Black tea is fully fermented tea.  Oolong Tea is a partially-fermented tea.  Oolong tea comes in three degrees of fermentation: lightly fermented, moderately fermented and heavily fermented.  The identifying features of lightly fermented Oolong tea, such as PaoZhong, High Mountain Oolong are a full aroma, clarity, and a golden color.  Moderately fermented types such as Tie Kuan Yin and Dong Ding have a brown color, a full "mature" flavor that appeals more to the sense of taste than that of smell, and a vaguely sweet aftertaste.  Tea infused from moderately to heavily fermented tea leaves like Oriental Beauty has a red-orange color and a fruity aroma.  The fresh leaves are withered for several hours and the leaves are then rolled to release enzymes (needed for the next step).  Then the tea leaves are allowed to oxidize although for a shorter period than for black tea and the process is stopped before it is completed.  The tea is fired (heated) to prevent further oxidation and to dry the tea. Oolong teas can vary significantly in flavor depending on when the oxidization process is interrupted having more of a green tea character if interrupted early in the process and more black tea character the longer oxidation continues.
